We are the event catering arm of the iconic Dawson’s Oyster Supplies. We’ve been Newcastle’s favourite oyster supplier for 60 years, creating memorable experiences at weddings and corporate events across Lake Macquarie, the Hunter Valley, Central Coast and beyond.
If you’re looking for something that feels special, oysters are hard to beat. They’re the kind of offering that draws in a crowd, starts conversations, and gives your guests a moment to slow down and enjoy.
We create oyster experiences with our oyster bar and mobile oyster carts that feel seamless for you and effortless for your guests.
How your oyster experience comes to life
Start by emailing us your event details - including date, location and guest numbers.
Once we’ve confirmed availability, we’ll chat through your plans and guide you with our recommendations - from how many oysters you’ll need to any extras you might like to include (yes, we do caviar and other seafood options too!).
From there, we’ll put together a tailored quote for you to review. Once you’re happy, a 50% deposit secures your date.
Closer to the event, we’ll organise a tasting at our Warners Bay shop so you can try our oyster condiments (and oysters!). Not local? We can easily do this over the phone or via email. We’ll also lock in all the final details - timings, setup, and venue logistics.
The remaining invoice balance is due 7 days prior to your event.
On the day, we take care of everything. We hand-select and shuck your oysters, bring our cart or bar, ice, serveware, and condiments, and set up well before guests arrive. If you’ve selected live shucking, we’ll bring unopened oysters and shuck them fresh on-site.
Once service begins, our staff will keep the oysters flowing, roam with platters, and tidy as needed. When the oyster moment wraps up, we quietly pack down, leaving no trace so you can enjoy the rest of your event.
